Easy Chicken Casserole

Ingredients
3 cups dry rice
1 rotisserie chicken’s breast meat
2 cups sharp cheddar
1 cup sour cream
1 pack cream cheese
1 head finely chopped broccoli
1 cup shredded carrots
Instructions
1. Make rice in the rice cooker or on the stove the night before. Separate rotisserie chicken breast meat.
2. Let cream cheese come to room temperature so it is mixable.
3. Preheat the oven to 350 degrees.
4. Combine rice, chicken breast, ½ of the cheddar cheese, sour cream, cream cheese, broccoli, and carrots into an oven safe pan. I like to use my glass pan for casserole type dishes. Cover with foil.
3. Bake for 30 minutes or until everything is cooked through.
4. Add remaining cheese to the top and cook until the cheese is melted, about 5-10 minutes.
***I ran out of shredded cheese. That is why my casserole looks ugly with square cheese on top. That is what I had, so that is what I used.
